Raleigh, NC - Cherry Tomatoes can be enjoyed in a variety of ways.  You can eat them by the handful, drizzle them with your favorite dressing, add to many dishes, use as an appetizer or as an edible garnish.  Cherry tomatoes are an excellent source of vitamin A and vitamin C, a good source of vitamin K and potassium, fat free, cholesterol free and low in sodium.

 Roasted Cherry Tomatoes

 Makes 4-6 servings

Fresh ripe tomatoes on black slate-1

Ingredients:

  • 2 pounds cherry tomatoes
  • 3 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground black pepper

Preparation:

  • Heat oven to 400 degrees F.
  • Place the tomatoes on a sheet pan, drizzle over the olive oil and season with salt and pepper. Roast until the tomatoes collapse, about 10 minutes.
